Mineral and Protein Content of Wheat Grains as Influenced by Variety, Soil, and Fertilizer1

Significant differences between wheat varieties with respect to the amount and composition of the ash of the grain, independent of location and fertilizer treatment, were found. Such differences between wheats must be due to gent action and may play a part in determining baking quality.
